Meat, vegetables and buckwheat are cooked in one container, most conveniently - in a frying pan with a high side or in a saucepan. To enhance the flavor and richness, add tomato paste plus a spicy bay leaf. If you choose a delicate method without pre-frying, then simply put all the cuts (meat and vegetables) in ceramic pot or cauldron, pour boiling water with spices and diluted tomato paste, put to simmer in oven.
Ingredients:
Beef - 400 g
Buckwheat - 1 tbsp.
Onions - 1 pc.
Carrots - 1 pc.
Garlic - 2 teeth
Tomato paste - 70 g
Vegetable oil - 30 ml
Salt, hot pepper, bay leaves, herbs - to taste
Step by step recipe:
Step 1 - To cook buckwheat like a merchant with beef at home, take the products from the list. Beef can be replaced with any other meat, as a rule, boneless loin is used. But, if desired, a similar recipe is applicable for chicken, rabbit, ribs cut into pieces. Take fresh beef pulp, if necessary, defrost in advance.
Step 2 - Rinse the buckwheat and fill it with cold water - keep it aside. Swollen buckwheat comes to readiness much faster on fire. In parallel, warming up the pan, pour in the vegetable oil. After half a minute, throw a finely chopped onion into the sizzling fat, sauté for 3-4 minutes until transparent. Next, add the carrots. Three coarse shavings or cut into thin circles. Do not forget about garlic - we can easily crush two peeled cloves. Stir in the oiled onion and continue to fry for another 3 minutes.
Step 3 - Put the beef cut into large pieces by the carrot-onion sauté. Stir again and let the meat turn white on all sides.
Step 4 - Now add a serving of tomato concentrate. After stirring, lightly caramelize vegetables with meat - about 2-3 minutes.
Step 5 - Pour in about 100 ml of boiling water, add a leaf or two laurels and bring to a boil. Reduce the temperature and simmer, covered for 30 minutes. Perhaps the time should be changed - focus on the toughness, type of meat. The main thing is to achieve the softness of the fibers, that is, to prepare a full, but not yet seasoned gravy.
Step 6 - Put the swollen buckwheat to the meat gravy. Salt.
Step 7 - Add boiling water so as to cover the porridge with a "margin" of about 1 cm. Install the lid and simmer for another 10-15 minutes. We try the cereals for hardness, if necessary, pour in boiling water and add salt. We remove the buckwheat from the stove, pepper it.
Step 8 - Serve delicious buckwheat with beef in a merchant's way - with herbs, pickles and fresh vegetables.
