Delicious and airy cake with plums will be appreciated not only by your family, but also by friends, if you treat them with such fragrant pastries in the heat of the heat! Choose non-acidic fruit varieties with firm flesh so that they do not sink to the bottom of the dish during baking and do not burn. Optionally, you can add ground cinnamon, a pinch of ginger, orange or lemon flavoring, vanilla to the dough.

Ingredients:

Plums - 200 g

Kefir - 1 tbsp.

Wheat flour - 2 tbsp.

Chicken egg - 2 pcs.

Sugar - 1 tbsp.

Salt - 3 pinches

Baking powder - 0.5 tsp

Citrus flavoring - 2 drops

Mold oil

Powdered sugar for dusting

How to bake:

1. Prepare the required ingredients. Kefir can be of any fat content. It is advisable to warm all the products for the dough to room temperature so that the cake bakes faster.

2. Break chicken eggs into a deep container if you beat them with a mixer, or a bowl of a food processor. Pour in granulated sugar and salt, beat everything for 3-4 minutes at the maximum speed of the technique, turning into an airy foam. There is no need to separate the whites from the yolks - the eggs will beat just fine. It is important not to interrupt them during whipping, so that the foam does not settle and the mass does not stratify - that is why it is not recommended to beat them for more than 5 minutes.

3. Pour in kefir, add baking powder and stir. The soda included in the baking powder will begin to interact with kefir, saturating the dough with carbon dioxide, making it porous and airy.

4. Sift the wheat flour in advance and mix it into the egg-kefir mass with leisurely movements or using the technique, turning on the minimum speed.

5. The finished jellied dough will have a thick consistency, about the same as for pancakes.

6. Rinse the plums in water, remove the cuttings and seeds, and cut the fruit in half. Then cut each half into slices, but not wide, so that they stick to the surface of the dough and do not settle to the bottom. Preheat oven to 180 degrees.

7. Grease the mold with butter or vegetable oil, pour the prepared dough into it.

8. Place plum slices directly on top of it. Place in the oven and bake for about 25 minutes. Be sure to watch it - the finished baked goods will turn golden on top.

9. Leave the baked jellied pie with plums in the oven for 5-10 minutes, while turning off the heating. Thanks to this, it will not fall off due to contact with cool air. Then remove it from both the oven and the mold.

Cool the open plum pie, sprinkle with powdered sugar, cut into pieces and serve.
