Delicate, aromatic meat with a subtle lemon note and a spicy aroma is a dish that does not require much effort in preparation. Nevertheless, it can undoubtedly decorate even a festive table or pleasantly diversify the daily meal. Georgian cuisine is rightfully considered one of the most delicious in the world! Plunge into the world of sunny Georgia in your kitchen!

Ingredients:

  • Beef - 600 g
  • Sour cream - 2 tablespoons
  • Honey - 1 tablespoon
  • Lemon - 1 pc.
  • Cilantro - 1 bunch
  • Salt to taste

Prepare all the food you need. I took beef, but it can be pork, and lamb, and even chicken. It is better, of course, to use chilled meat.

We only need juice from lemon, so it can be added to meat and ready-made, factory production. But if you still take the squeezed one with your own hands, then first wash the citrus with very hot water - this way it will give more juice.

Georgian cuisine is very rich in greens, so use whatever you have for this dish. Parsley, dill, and basil are perfect. Well, my classic is cilantro. This herb is the most fragrant and piquant!

Choose liquid honey so that it combines well with all other ingredients.

Rinse the meat well, dry it, remove excess fat and veins if necessary. Cut the beef into medium-sized pieces. Do not grind, otherwise the chunks of meat will turn out to be dry.

Let's start pickling. We'll need a large enough ceramic or glass bowl. Put the beef in it, add chopped cilantro and honey. If suddenly the latter is too thick for you, then you can warm it up a little in the microwave, literally 20 seconds.

Recently, there is an opinion that heating honey, when used in different dishes, leads to the formation of a large amount of carcinogenic substances. I studied this issue for a long time and came to the conclusion that it is not so. Therefore, with a light heart, you can use honey in the preparation of various dishes and baking.

Pour or squeeze lemon juice into a bowl of meat, add sour cream. Salt to your liking. If you wish, you can also add your favorite spices inherent in Georgian dishes - these are, of course, suneli hops, fenugreek, allspice.

Mix everything well and leave to marinate for 30 minutes. In principle, such meat can be marinated from 20 minutes to 1 day.

For baking, we need a heat-resistant dish. It is best if it has high sides, because during cooking, the meat will give off juice and it may overflow. Place the beef and marinade in a suitable bowl.

Preheat the oven to 180 degrees. Bake the dish for about 45 minutes.

If you like a more stewed version of meat, you can cover the top of the form with foil. I like roast beef, so I didn't.

Serve Georgian meat immediately while it is hot.

Serve this dish with any side dish: potatoes or rice. But, of course, seasonal vegetables and greens are ideally combined with baked meat in Georgian style, or light fresh vegetable salads.
