Any kind of legume produces hearty, soft and tasty cutlets that can easily replace the meat version. According to this recipe, ready-made boiled beans, plus onion fried in oil, are used as the basis for cutlets. This is the most classic variation of cooking with a minimum set of ingredients, but if desired, beans can be supplemented with other products, for example, mushrooms are ideal.

Lean bean patties do not contain eggs, so they can be difficult to turn over during frying. Therefore, you must use a thick-walled cast iron pan or container with a non-stick coating.

Ingredients:

White beans - 250 gr.

Bulb onion - 1 pc.

Garlic - 1 tooth

Semolina - 1 tbsp.

Vegetable oil for frying - as needed

Bread crumbs - 2 tbsp.

Curry spice - pinch

Salt, pepper - to taste

How to cook:

1. Pre-soak the beans in water for 6-8 hours (you can overnight). This procedure will not only provide the legumes with a quick boil, but also make them more tender and soft.

2. After the beans, rinse, drain the water several times, put on fire to cook. You use 3 times more liquids than legumes, since it will boil over a long boil period. Throw in salt towards the end of the process, it can make the beans tough. Cook until cooked, the product should be as soft as possible. Drain the water completely.

3. Remove the onion head from the top layer, chop into cubes.

4. Heat vegetable oil in a frying pan, put onion slices inside. Saute until soft and transparent over medium heat, stirring occasionally.

5. Combine warm beans and sautéed onions in a separate container, stir.

6. Pass the mixture through a meat grinder to get a homogeneous minced meat. Add the garlic while chopping.

7. Pour in the required portion of semolina, season with turmeric and pepper. Add salt as needed. Mix the mass, cover with cling film, set aside for 10 minutes, so that the semolina slightly swells.

8. Next, separate small portions from the minced meat and roll the blanks of the same shape. Bread each of them in flour. Shake off the excess so that it does not burn during frying.

9. Set the pan on fire, pour in a sufficient amount of oil, after heating, lower it into the workpiece. Turn the patties over very carefully; the soft base is easily damaged. Fry over medium heat, covered, until lightly golden.

Transfer the lean bean cutlets to the main course, serve in tandem with a light vegetable salad.
