A pancake snack cake with mushrooms is an easy-to-prepare and incredibly tasty dish. Such a snack cake is suitable for every day and will be very useful on the festive table.
This pancake cake perfectly combines tender pancakes with aromatic mushroom filling and viscous melted cheese. Everyone will be delighted!

Making such a pancake cake with mushrooms and cheese is not at all difficult and the products are affordable. You can also add pieces of boiled or fried chicken or minced meat to this cake.
Be sure to prepare such an appetizer cake with pancakes for Shrovetide and please your guests too!

Ingredients:

Pancake dough

  • milk - 600 ml
  • eggs - 2 pcs.
  • salt - 1/2 tsp l.
  • sugar - 1/2 tsp l.
  • flour - 270 g
  • vegetable oil - 2 tbsp. l.

Filling

  • champignons - 500 g
  • cheese - 200 g
  • sour cream - 100 g
  • onion - 1 pc.
  • dill - bunch
  • ground black pepper - to taste
  • salt to taste

Step by step recipe

1. First, let's prepare the pancakes. Break eggs into a bowl, add sugar and salt. Beat everything a little.

2. Add about 150 ml of milk to this and mix again.

3. Add flour to the mixture and mix until smooth.

4. Add the remaining milk to the resulting dough and mix completely. Be sure to let the dough brew for about 15 minutes.

5. Before frying the pancakes, add 2 tbsp to the dough. l. sunflower oil and mix well.

6. Fry the first pancake in a pan with a small amount of sunflower oil. Fry the rest of the pancakes in a dry frying pan over low heat.
Pour a ladle of dough into a preheated pan and distribute it by tilting the pan in different directions. As soon as the pancake is slightly fried on one side, turn it over to the other side.

To make a snack pancake cake, we need 8 pancakes.

7. Now let's prepare the filling. Cut the champignons into slices. Cut the onion into quarters.

8. Put the chopped champignons in a hot pan with a little sunflower oil.
Fry over high heat.
Once all the liquid has evaporated, reduce the heat to medium, add a little sunflower oil and fry a little more.

9. We put about 15 beautiful plates of fried mushrooms on a plate, we will use them for decoration.
Add chopped onions to the rest of the mushrooms and fry the onions until soft.

10. Add sour cream at the end. Salt everything, pepper to taste and mix. Fry for another 1-2 minutes and remove from heat.

11. Three cheese on a coarse grater.

12. Putting together a snack cake. Grease the bottom of the baking dish with butter.
Put the pancake, put the mushroom filling on it and sprinkle with grated cheese on top. Cover with the next pancake. Thus, we collect a cake of 8 pancakes.

13. Sprinkle the last pancake with grated cheese and lay out the plates of prepared mushrooms beautifully.

14. We put the pancake cake in a preheated oven to 180 degrees. We bake for about 15-20 minutes.

15. Transfer the baked pancake cake to a dish. Decorate the top of the snack cake with chopped dill.

The snack pancake cake turned out to be fragrant, satisfying and very tasty. It ideally combines mushrooms fried in sour cream with soft melted cheese and delicious pancakes.
