It often happens to me that I cook too many potatoes when I cook salads "Olivier" or "Herring under a fur coat", it always seems that there is not enough of it. Therefore, I have in stock a recipe for "fast", as we call them, meatballs. They cook very quickly and are eaten even faster.
So, I usually boil potatoes "in their skins". It needs to be peeled and grated on a coarse grater.
Add grated cheese and one egg to it.
Be sure to salt and pepper. I also add dry garlic. I mix everything well.
I also add greens for the color, I always have frozen parsley from my mother's garden. I add one or two tablespoons. Fresh green onions can be added.
From the resulting mass with wet hands, I form small balls and fry in vegetable oil until golden brown.
Serve with sour cream or mayonnaise. They are eaten right away without even having time to cool down, because they are very tasty.

2-3 medium potatoes
60-80 grams of cheese
1 egg
