Hello, dear readers of the "Cooking with Natalia Kalnina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I want to share the recipe for the "Ryzhik" cake (honey cake), everyone in our family loves it, without exception, and I love it since childhood. This is exactly the same recipe, about which they say the recipe, proven over the years. I think many of you cook it, and if you have forgotten about it or have not yet cooked it, then be sure to cook it.

Recipe:

For cakes:

Eggs - 3 pieces

butter -30g

sugar -200g

honey -2 tbsp. (with a slide)

flour -450-500g

soda -1 tsp

salt -1 / 3 tsp

For the cream:

sour cream - 700 g

sugar -1 glass

citric acid -1 / 3 tsp. (or to taste)

prunes -300g

COOKING METHOD

Let's take a dough. We take a small saucepan or refractory dish, break 3 eggs, add 200 grams of sugar, 30 grams of butter and 2 tbsp. honey with a slide, add 1 tsp. soda without a slide and 1 / 3c.l. salt.

We put it in a water bath and, while stirring, warm up the mass for 5 minutes, now we remove the water bath and add 300 grams of flour, mix and put it again in a water bath and keep it in a water bath for another 5 minutes.

Sift the remaining flour on the table and put the hot dough, knead first with a spatula so as not to burn yourself, then knead with your hands.

Perhaps you may need more flour, I didn't need it anymore. The dough should be elastic and sticks slightly to your hands.

Divide the dough into 9 parts. Now we take one piece and roll out a circle or a square, depending on which shape you want the cake to be.

Using a rolling pin, place on a baking sheet lined with baking paper.

We put in a preheated oven and bake until golden brown for 4-5 minutes, be guided by your oven.

While the cake is still soft, cut it off in the shape we need, put the cuttings aside, they will be useful to us.

This is how we bake all the cakes.

Today I propose to cook with prunes, dry my prunes and chop 300 grams.

Let's measure my homemade sour cream with a fat content of more than 40%, I take 600-700 grams, add 1 glass of sugar, I love sugary sweet pastries, so I add a little citric acid to the cream. Now beat with a mixer until thickened, the main thing here is not to interrupt, so that sour cream does not turn out.

When I don't have homemade sour cream, I take store sour cream with a fat content of 20-25%, add sugar and just gently stir with a whisk, if you beat it with a mixer, the cream will be too liquid.

We collect the cake, generously coat the cakes with cream, sprinkle with prunes. Now we coat the sides and top of the cake. Dry the cuttings in the oven until golden brown and grind with a blender.

Now sprinkle the top and sides of the cake. We give the cake to be sure to soak for at least 7 hours, and only then can it be cut. We decorate at your discretion, today I made a spider web of melted white chocolate.

The cake turns out to be soft and extremely tasty.

You do not need to add prunes to your taste, but you can add walnuts or both at the same time.
