This homemade tea pie will conquer all lovers of cottage cheese baking. It's amazingly delicious, with an amazing citrus note and incredibly tender, just melting in your mouth. It is very difficult to stop at one piece of such a pie. This delicate cottage cheese pie is perfect for pampering the family with fragrant pastries on a day off. And it will also not be a shame to treat unexpected guests with such a homemade pie for tea.
Preparing this cottage cheese pie is not difficult and will be within the power of every housewife. The complete absence of flour gives the pie a special tenderness. It is preferable to use corn starch in the recipe, but you can also take potato starch.
Be sure to try to cook such an incredibly tender, just perfect cottage cheese pie for tea, your family will be delighted!

Ingredients:

  • cottage cheese - 1 kg
  • sugar - 200 g
  • eggs - 4 pcs.
  • butter - 120 g
  • corn starch (potato) - 4 tbsp. l.
  • semolina - 80 g
  • lemon - 1/2 pc.
  • vanilla sugar - 10 g
  • baking powder for dough - 10 g

Step by step recipe

1. Put 120 g of soft butter in a bowl and pour 100 g of sugar. Beat the butter and sugar with a mixer for about 2 minutes until white.

2. Remove the zest from the lemon with a fine grater. You only need to remove the yellow part.

3. Add the juice of half a lemon to the whipped butter with sugar. Throw in the lemon zest as well.
Mix again until smooth.

4. We put 1 kg of cottage cheese in a large bowl, pour 100 g of sugar and 10 g of vanilla sugar to it.
Divide four eggs into white and yolk. Pour the whites into a clean, dry bowl, and immediately add the yolks to the cottage cheese.
Grind cottage cheese with sugar and yolks with a submersible blender until smooth.

5. Add whipped butter to the prepared curd mass. We mix everything with a mixer.

6. In a separate bowl mix dry ingredients. Pour 80 g of semolina, 4 tbsp. starch and 10 g baking powder. We mix everything.

7. Pour the prepared mixture of dry ingredients to the curd mass. Again, mix everything with a mixer.

8. Beat egg whites until stiff and fluffy, about 4-5 minutes.

9. Whipped proteins are added to the curd mass in 2 sets, each time gently mixing with a spatula so that the mass remains airy.

10. Lubricate the baking dish with butter and sprinkle with semolina. The diameter of my mold is 25 cm.
Put the dough into the prepared form and distribute it in the form.

11. We put everything in the oven preheated to 180 degrees. Bake for approximately 50 minutes.

12. We take out the finished cottage cheese pie from the oven and let it cool completely, then it will be easier to cut it into pieces. The cake will shrink as it cools, this is normal.
Sprinkle the cooled cake with powdered sugar. Cut the cake into pieces and serve on the table for tea.

The cheesecake turned out very tasty and tender. Everyone likes it, both adults and children. I highly recommend cooking it, as it is so tasty that it is simply impossible to stop at one piece.
