Easter cakes: this is how my grandmother cooked, my mother cooks, and now I cook this way. Sharing a recipe

Easter cakes according to my grandmother's recipe, when she baked such Easter cakes for Easter, she said that this is how we did it in cooking. This year I decided to bake in this version. By the way, you can take your favorite dough for Easter cakes.

Recipe:

  • flour -500-550 gr
  • milk -300 ml
  • sugar -150 gr
  • vanillin -1 pack
  • butter -100 gr
  • egg -1 pc
  • high-speed yeast -25 gr
  • sugar -1 tbsp.
  • water -50 ml
  • walnuts or raisins -150 gr

COOKING METHOD:

So, let's start cooking.
First, check the yeast, pour 50 ml of warm water into a bowl, add raw yeast 25 grams and 1 tbsp. sugar, mix everything, leave for 10 minutes.

Melt 100 grams of butter and leave to cool. Pour the tested yeast into a deep bowl, they should begin to bubble and a “foam cap” will form.
pour 300 ml of warm milk, break 1 egg, add 150 grams of sugar and vanillin, pour in butter, add half a tsp. salt and gradually add the sifted flour, knead the dough. The dough needs to be well kneaded, I need about 550 grams of flour, I grease my hands with vegetable oil and knead the dough for 10 minutes, you can use a dough mixer, which I usually do.

Now we set the dough to rise for 1 hour, during this time the dough should increase in volume, then we take out the dough and knock it out and do this 3-4 times, it takes 2-4 hours in time.
Before the last raising of the dough, stir in the filler. Raisins, dried cranberries, etc., I have walnuts today.
We shift the finished dough to the table, punch down, separate a little dough for decoration.

Divide the rest of the dough into molds. I bake such Easter cakes in such forms, the Easter cakes move away from them well and bake. By the way, in such forms I also bake homemade bread.

I grease the molds with oil and slightly increase the edges with baking paper.
I fill out the form by 1/3, leave it until the dough rises in the form. As the dough in the form begins to reach the edge, I take the reserved dough from it and make 2 long flagella, so that you can make a rim along the edge of the form. With a knife I make cuts on both sides, such Christmas trees should turn out.

And I make 4 more small flagella. We make a cross out of small flagella, put a cut flagellum in a circle.

put in the oven and bake at 170 degrees until cooked for 30-40 minutes. If the top is browning, cover it with foil.
and bring to readiness, you can check with a wooden skewer.
We take out the finished cakes from the mold, let them cool.
