Rulladini is an unusual way to cook the most ordinary chicken fillet tasty and juicy. Rulladini are unusually very tender and fragrant. Chicken meat goes well with cherry tomatoes and viscous cheese and it turns out completely non-dry. And rulladini look very original, like meat cupcakes with filling. Such an unusual and beautiful portioned meat dish will decorate any festive table or diversify a family dinner. And rulladini will surely appeal to everyone who adheres to proper nutrition - they have a minimum of fat and a maximum of benefit.
Rulladini is prepared quite simply from chicken fillet, cheese and vegetable filling. You can also stuff chicken muffins with mushrooms, broccoli florets or any other stuffing. You can also use turkey fillet, lean pork or veal to prepare roulladini.

Ingredients:
- chicken fillet - 2 pcs. (700 g)
- cherry tomatoes - 8 pcs. (150 g)
- mozzarella mini - 100 g
- seasoning "Italian herbs" - 1 tsp. l.
- salt - to taste
- ground black pepper - to taste
Step by step recipe
1. Let's prepare the meat first.
It will take about 700 g of chicken fillet, these are 2-3 chicken breasts. Wash each fillet, dry with paper towels and cut lengthwise into 2-3 or 4 parts, depending on the size of the fillet. From two large fillets, I got 7 layers of meat.
Pound each piece with a meat mallet on both sides.
2. Salt, pepper and sprinkle all the fillets with Italian herbs. Spread the seasonings over the meat with your hands and turn over to the other side. On the other hand, we also salt the fillet a little.
Grease muffin tins liberally with butter.
3. In each of the molds we put a piece of prepared meat. Lay out the meat so that there is a small indentation in the middle. Since my 2 pieces of meat were too large, I cut off small pieces from them and I got another cupcake.
Place a cherry tomato in the center of each fillet. In total, I needed 150 g of tomatoes.
4. Cut 100g mini mozzarella in half. Put mozzarella halves on top of the fillet with tomato. Instead of mozzarella, you can use any other cheese that melts well.
You can also stuff rulladini with other fillings, such as mushrooms, eggs or broccoli florets.
5. We put everything in the oven preheated to 180 degrees. Bake for 30 minutes.
Rulladini is served hot. If desired, they can be decorated with greenery.
