Cottage cheese biscuit with fruits and berries is a very tasty and juicy homemade cake. It has a tender cottage cheese dough and a lot of juicy sweet and sour filling. They are delicious both warm and cold. Such sweet open pies will be appreciated by both adults and children.

Ingredients:
Dough:
- flour - 350 g
- cottage cheese - 200 g
- butter - 160 g
- sugar - 2-3 tbsp. l.
- eggs - 1 pc.
Filling:
- starch - 6 tbsp. l.
- sugar - 6 tbsp. l.
- berries or fruits (blueberries, red currants, peach, raspberries)
Step by step recipe
1. Let's prepare the dough first.
Put 200 g of cottage cheese in a bowl, break 1 egg and pour 3 tbsp. l. Sahara. Blend everything with an immersion blender until smooth. If desired, the cottage cheese can not be whipped, then there will be grains of cottage cheese in the dough, but this will not affect the taste.
2. Pour about 280 g of flour into a separate bowl and put 160 g of cold butter. Grind the butter with flour with your hands into crumbs.
3. In the resulting crumb, add the already prepared curd mixture. Mix everything first with a spatula and then with your hands. If the dough turns out to be liquid, then add a little more flour. I needed 350 g of flour to knead the dough. The dough does not need to be kneaded for a long time. As soon as it is combined into a lump, stop stirring it.
4. Cover the dough with a lid or wrap it in cling film and put in the refrigerator to infuse for about 1 hour.
5. After an hour, take the dough out of the refrigerator and divide it into 6 approximately equal parts.
Take a piece of dough and roll it into a circle. Put the rest of the dough in the refrigerator.
6. It is advisable to sprinkle the rolled dough with 1 tbsp. l. starch, it will take excess moisture from the berries. Put berries or fruits on top of the starch. I made biscuits with raspberries, blueberries, red currants and peaches.
7. To prepare a biscuit with a peach, you need to cut it, remove the stone and cut into thin slices. Arrange the peach slices in a circle on the dough.
You can also make assorted.
8. Sprinkle everything with about 1 tbsp. l. Sahara. The amount of sugar depends on the sweetness of fruits and berries.
9. We make the sides by fastening the edges of the dough in a circle together.
10. Place prepared biscuits on a baking sheet lined with parchment paper. We put the baking sheet in the oven preheated to 180 degrees. Bake for approximately 20-30 minutes. Depends on the size of the biscuits and oven.
11. After baking, the biscuits can be sprinkled with powdered sugar.
The biscuits turned out very tasty and fragrant. The filling can be absolutely anything.
Also, such biscuits can be prepared with vegetable filling. Then in the dough you need to add not sugar, but half a teaspoon of salt. Be sure to cook these biscuits, it's very tasty and easy.
