Incredibly tender cottage cheese casserole with apricots for tea for every day. It turns out very tasty and airy, moderately sweet and with a pleasant unique sourness and aroma of ripe apricots. This dessert is especially good for morning tea or coffee. And this cottage cheese casserole will be appreciated by children who do not eat cottage cheese in its pure form.
Preparing this cottage cheese casserole with apricots is so simple that everyone can handle it. I highly recommend grinding the cottage cheese with a blender or at least through a sieve, so the casserole will turn out incredibly tender. Also, instead of an apricot, you can put any other berries or fruits.

Ingredients:

  • cottage cheese - 400 g
  • eggs - 2 pcs.
  • sugar - 5 tbsp. l.
  • apricots - 10-12 pcs.
  • semolina - 3 tbsp. l.
  • vanilla sugar - 10 g

Step by step recipe

1. Put 400 g of cottage cheese in a bowl, pour 10 g of vanilla sugar and 3 tbsp. semolina. Blend everything with an immersion blender until smooth. You don’t have to do this, but if you chop the cottage cheese, the casserole will turn out more tender.

2. Break 2 eggs into another clean and dry bowl. We start beating them and gradually add 5 tbsp. Sahara. Beat everything for a few minutes until a dense foam.

3. Pour the beaten eggs into the prepared cottage cheese. Mix everything with a spatula or mixer at low speed. The dough is ready.

4. Lubricate the baking dish with butter. Sprinkle with semolina on top.
Pour the dough into the prepared form. The size of my mold is 16*26 cm. Distribute the dough evenly over the mold.

5. We take about 10-12 washed apricots and cut them in half, removing the seeds.
Lay the apricot halves cut side down on the curd mass. Instead of apricot, you can use other fruits or berries.

6. We put everything in the oven preheated to 180 degrees. Bake on top + bottom for about 40 minutes.

We take out the finished casserole from the oven and let it cool slightly.
Cut the cooled cottage cheese casserole into portions and serve.
The casserole with cottage cheese and apricots turned out to be very tasty and fragrant. Delicate curd base and apricots, which give a special sourness, will not leave anyone indifferent. If desired, the top of the casserole can be sprinkled with powdered sugar. Be sure to cook it, it is very tasty.
