Ingredients:
2 carcass fresh herring
1 L of water

0.5 hours. l. ground cinnamon
0.5 hours. l. dried mint
10 pieces. peas allspice
0.5 hours. l. dry chili
Preparation:
1. Half of the salt, all spices and sugar to pound in a mortar or in the bowl of a wooden pestle. You can grind the mixture for salting fish in a coffee grinder.
2. The second half portion of the salt to dissolve in water.
3. Herring thoroughly rinse the sand and slime. The fish can be salted whole carcass or cut the belly from tail to head, remove the entrails, leaving the eggs or milt.
If you leave your head, it is necessary to raise the gill cover and separate the gills.
Once again, rinse thoroughly with herring.
4. Salted fish should be in a pot with a lid, but separate as herring quite odorous and its smell impregnated all.

6. Pour herring prepared spicy aromatic mixture with salt and sugar.
