As a child, I especially remember Kutiawhen I wore it to my godfather for the supper (in a simple way: dinner before Christmas). On such an evening, the godfather gave me gifts and it remained a pleasant childhood memory.

As I got older, I began to meet Kutya at the commemoration. And these are completely different memories.

So what is it Kutia and why is it cooked on such days?

Kutia - translated from Greek - beans, boiled wheat. The tradition of cooking kutya came from pagan times, when this dish was among the "sacrificial" ones and it was called "food of dead ancestors." On Christmas, kutia is one of the 12 traditional dishes and is the main one among them. They began to cook it in Russia around the 10th century after Prince Vladimir made a choice in favor of Christianity and many priests came from Byzantium. It was they who introduced our ancestors to the rite of eating and eating special food on special days.

Distinguish three Kutya species: hungry, generous and rich.

*hungry kutya is prepared on the eve of Epiphany (it contains a minimum of calories and additives. The same kutya is prepared for the commemoration.

*generous kutya is prepared on New Year's Eve, it already contains butter and cream.

*rich kutya is prepared on Christmas Eve before Christmas - it is lean, but it should contain a lot of additives: honey, raisins, poppy seeds, nuts.

Kutya is prepared from different cereals, but in Russia it is more common: it is wheat or rice. Today I cooked it from these cereals.

What you need:

*wheat
* rice
*raisins
* nuts (I have walnuts and pine nuts)
*poppy
*honey

Wheat is needed soak for a couple of hours in cold water, pour poppy seeds with warm water, raisins - hot 👇

After the wheat is cooked (which will take about an hour), mix her with honey and add nuts and raisins 👇

You need to eat Kutia before all other dishes with a spoon or hands and wash it down with uzvar.

It is believed that children should be the first to eat Kutia, then the elderly, and then the rest of the family.
