When the aromas of homemade baked goods soar in the house, it always creates an atmosphere of comfort and warmth! And, it doesn't matter whether it's pie, or bread, or pancakes ...
Today I want to offer you a recipe for quick simple cakes made from kefir dough with cheese! The minimum set of products (... with the exception of cheese), cook quickly, but they turn out to be very soft and tasty!
Cooking ingredients:
Kefir - 200 ml
Chicken egg - 1 pc.
Vegetable oil - 2-3 tbsp. l. (into dough)
Salt - 1/2 tsp l.
Soda - 1/2 tsp l. (can be replaced with baking powder)
Hard cheese, type (Dutch, Russian) - 100 g
Flour - a little more than 300 g
Vegetable oil for frying cakes - 2 tbsp. l. (per batch)
Let's get started ...
Pour kefir or any other fermented milk product into a bowl, break the egg, add salt and whisk slightly.
Now we sift about half of the flour norm, add soda or baking powder with the same batch (1 tsp. l.) and mix well.
Then we sift the remaining flour, but in small portions, so as not to overdo it. It may take 300 g, or maybe 350 g will go away - it depends on the thickness of the kefir and on the moisture content of the flour itself, but we don't clog it a lot. When the dough is already going to be collected in a ball, add a little vegetable oil, it will become more elastic.
Then put the dough from the bowl on the table, knead well for 2-3 minutes, and leave it on the table, covered with a towel or cling film, rest for 5 minutes.
At this time, rub the cheese on a coarse grater.
The rested dough, no longer kneading, we begin to roll out into a rectangular layer, not too thin. After "resting" the dough rolls out easily and does not shrink. We distribute grated cheese over the surface.
We twist it with a roll, pinch the edges and cut into small washers 3-4 cm each.
Flatten each washer a little and sprinkle it lightly with flour.
Then we roll it into flat cakes, about 0.5 cm thick.
Fry the cakes in a preheated pan, each time adding a small amount of vegetable oil. On both sides, until golden brown - they bake very quickly and well. Cook, taste, Bon appetit!
If there is no cheese, don't put it in! There will be just delicious cakes with kefir!
