Kystyby (or Kuzikmyak) are traditional Tatar / Bashkir unleavened pies. They are molded very simply: the cake is stuffed with mashed potatoes (it is convenient to use the rest from lunch) or millet porridge.
Ingredients
- Filling:
- 500 gr potatoes
- 1 PC. bulb onions
- 1 tbsp vegetable oil
- For unleavened dough:
- 1 tbsp kefir
- 1 pc egg
- 3 tbsp flour
- 1 hour l soda
- 1 hour l salt
- 2 tbsp. l vegetable oil
How to cook
Kefir should be taken at room temperature or slightly warmer. Add soda to it, leave for 5 minutes, bubbles will go - the alkali is neutralized. You do not need to extinguish soda with vinegar, kefir will cope with this.
Add salt, egg, butter to the fermented milk product. Mix well.
Pour flour into a bowl of kefir, then put everything on the table and knead. Wrap the dough in a bag and let sit for 15 minutes (minimum).
Then we roll it out thinly and fry in a pan on both sides until golden brown without any fat.
At this point, the filling should be ready. Cook potatoes, crush them with butter and milk. It will be tastier if you also add fried onions.
Then we put our filling on one side of the cake. and cover the second one. There is also a small nuance. So that they do not break in the middle, you need to do all this while they are hot.
Top with kystyby grease with butter and serve hot.
