I watched my mother-in-law make a fish loaf and a sweet one from the same dough. There are only 3 ingredients, and you can think of as many fillings as you like.
Recently I was visiting my mother-in-law and once again watched her cooking. She made a fish roll, for which she kneaded the dough in just 5 minutes.
Later, the mother-in-law said that she uses the same dough for sweet pastries. It just changes the filling, but the dough remains the same. I have not come across such a test before and decided to repeat it at home.
The mother-in-law calls this dough “3 glasses”, because it requires 2 glasses of flour and half a glass of water and vegetable oil to make it.
Step by step recipe on how to make a universal dough
Such a dough is prepared incredibly quickly. I add all the ingredients to the bowl in turn. First, I measure out the flour and only then the liquid ingredients, so as not to wash the glass again.
For measurement I use a standard 250 ml beaker. I did not weigh the ingredients, as in this case small inaccuracies are quite acceptable.
Stir the dough with a silicone spatula until smooth. The finished dough should be collected in a ball.
I spread the dough ball on the work surface and roll it into a layer about 2-3 mm thick. There is no need to dust the table with flour, the dough contains oil and does not stick.
So the basis for the roll is ready, where you can put any filling. I decided to make a sweet roll and added candied orange fruits, I have a lot of them.
I add along with the syrup. The main thing is that there is not too much liquid. I distribute the candied fruits over the dough, leaving the fields for pinching.
I roll a layer of dough into a roll, pinch the dough from the edges so that the filling does not flow out. Lubricate the surface of the roll with a beaten egg and sprinkle with sugar. If you cook something hearty, it is better to give up sugar.
I bake in an oven preheated to 180 ° C. It took me about 40 minutes. The baking time depends on the filling, so be guided by the golden brown crust. Let's see what kind of roll I got.
I was worried that the candied fruit syrup would leak out of the dough and the roll would turn out to be tasteless. But in vain. The syrup really leaked out a little, this is already my oversight, I did not pinch the dough well, but the roll was baked well.
It turned out very tasty. The baked dough tastes like Armenian gata, although I cooked it without yogurt or kefir.
