I am sharing a universal recipe for currant jelly of any color. I show the whole process step by step.
I love summer, warm weather and fresh berries. But this year, the mother-in-law decided not to handle the berries and hand them all over to me. And I don't want to bother with berries at all, I want to walk with my son, and not hang around in the kitchen.
Now is the season of the currant. I have already dealt with black and red currants and decided to test my favorite recipe on white currants. Looking ahead, I want to say that the method works, and the recipe turned out to be absolutely universal. I will not delay, let's cook!
Step by step recipe on how to make currant jelly of any color
- Currant 1.5 kg (in this example white)
- Sugar 1.5 kg
- Water 2.5 l
I wash the berries and put them on a sieve so that the excess water is glass. If you are cooking with red currants, you don't even need to remove them from the branches.
I put the berries in a saucepan and sprinkle with sugar, and then stir so that they give juice.
I put the pan on the fire, bring it to a boil and cook for about 10 minutes after boiling.
It is best to use a large-capacity saucepan, as during cooking the mass increases in volume and sometimes foams a lot.
When the mass stops foaming and starts bubbling, it is most likely done. But just in case, I check the temperature with a thermometer, it should be above 105 ° C.
I filter through a fine sieve, pour the future jelly into jars, close the lids and, after cooling completely, put it in a dark place for storage.
I do not throw out the cake and the bones left after straining, but make fruit drink out of them. It's simple: I put the cake in a 3-liter jar, fill it with boiling water, close it with a lid, turn it over and put it in the oven.
Due to the small space, the liquid in the oven will cool very slowly and the fruit drink will be sterilized. Or you can wrap it in a blanket the old way. It is better not to store such fruit drink for a long time, after all, there is not much sugar in it.
