Today I'm making an amazing strawberry dessert! Delicate, airy and deliciously delicious.

I need strawberries, I have 250 gr.
I washed the strawberries, cut off the tails. Cut into small pieces.
The strawberries should now be completely frozen. I send it to the freezer for 2 hours, I will look.
Now I need two egg whites. In the original recipe from Nastya, proteins are used raw. If you are confident in the quality of the eggs, then use raw, it is much easier. I decided to warm up the proteins.
I will warm up the proteins in a water bath. I put the water on the fire, as it boiled, I reduce the heat to the smallest.
I add sugar 60 gr to proteins.
I put the bowl on top of the saucepan. Stirring with a whisk, I will warm up the proteins.
Steam should go from the proteins, the sugar should be all dissolved. It is necessary to stir all the time so that the proteins are not cooked.
You can check with your finger, it should be noticeably hot, but not scalding. I remove proteins from a water bath and cool to room temperature.
I transfer the frozen strawberries to a blender bowl and grind them into small crumbs.
Pour the cooled proteins with sugar into the strawberry crumbs.
Begin to beat with a mixer. The mass begins to brighten and increase in volume right before our eyes. Beat for about 5 minutes.
