Today we will cook one of the most famous and popular steaks in the world - ribeye (Ribeye)roasting medium. This degree of roast is recommended by all the famous chefs for preparing ribeye steak, so that it remains soft and juicy.

I think it's not a secret for anyone that this is the favorite food of men, mine is no exception, and buying first-class meat, you simply cannot afford to cook it badly or incorrectly. Knowing a few simple secrets, you can cook an excellent steak at home using a regular frying pan and oven.

Ingredients:

Ribeye beef (thick edge) - 750 g

Sea salt - 1 tsp

Ch.m. pepper - 0.5 tsp

Preparation:

  • To prepare a delicious and high-quality steak, of course, you need to buy a good piece of meat (thick edge), it is not cheap, but worth it. The meat is usually sold matured, from seven days to two weeks. Take the meat out of the refrigerator well in advance, it should be at room temperature by the time of cooking.
  • If the meat is vacuum packed, remove it, the piece of beef should be thoroughly dried with paper towels, it should be completely dry on all sides before cooking.
  • Cut a piece of beef in half across the grain. The most delicious and juicy ribeye steak is obtained from pieces 2.5-3 centimeters thick. Prepare a Teflon-coated pan with a metal handle.
  • Heat a skillet over high heat. Put the beef steaks in a completely dry frying pan, fry them on all sides for 1-2 minutes until golden brown. This will seal all the juices inside the meat. A sufficient amount of beef fat will be released from the ribeye, on which the steaks will be cooked.
  • Since we cut the steaks three centimeters thick, we also do not forget to fry the sides until golden brown. At the same time, set the oven to warm up to 200 degrees.
  • Now pepper the steaks and sprinkle generously with coarse quality sea salt. We send the frying pan with steaks to reach readiness in a preheated oven at 200 degrees for 10 minutes in the top and bottom heating mode. You do not need to turn on the convection or grill. After a while, we take out the steaks from the oven and be sure to let them rest before serving at least ten minutes.
  • A ready-made ribeye steak is served, usually with a little boiled potatoes or mashed potatoes and lots of fresh vegetables or a salad of them.

A properly cooked ribeye steak will have a beautiful pink color in the middle, and the meat itself is juicy, soft with a pronounced beef taste, a real taste delight. Pour a glass of cold dry red and delight your beloved men with a delicious dinner.
