Eggplant in batter is a delicious and popular seasonal dish. They are usually served as a hot snack, but honestly they are good cold too. You can serve eggplants in batter with any meat dishes; it will also be delicious with a side dish of potatoes. And if you are an eggplant lover, then this recipe is definitely yours, especially if you lightly grease each slice with mayonnaise sauce with the addition of garlic and fresh herbs.

Ingredients:

Eggplant - 300 g

Chicken egg - 1 pc.

Flour - 1.5 tbsp.

Salt to taste

Ch.m. pepper - taste

Vegetable oil - 3-4 tablespoons

Preparation:

1. Prepare foods on the list. Wash the vegetables, dry them, the egg should be at room temperature, it is advisable to take vegetable oil refined, odorless, suitable for frying at high temperatures.

2. Cut the eggplant into equal circles 0.5 centimeters thick, add a little salt, leave for a few minutes, it will let the juice out and the bitterness will go away a little.

3. At this time, we will prepare the batter. Beat a chicken egg in a deep bowl, add about a teaspoon of wheat flour, salt and pepper to taste. If you are not afraid of extra calories, you can enter a teaspoon of mayonnaise, from this batter and ready-made eggplants will only become tastier.

4. Then everything is very simple - you need to roll each eggplant slice in flour (otherwise the batter will not hold).

5. Now dip them into the batter.

6. Heat vegetable oil in a skillet and fry each eggplant slice in egg dough over low heat until tender. Turn the eggplants over from time to time to cook evenly. If the prongs of the fork fit easily into the slices, they're done.

7. Be sure to put the finished fried eggplants in batter on paper towels to remove excess oil.

8. Place on a plate and serve with your favorite sauce as a hot snack. An easy-to-prepare, incredibly tasty and satisfying dish is ready - enjoyable!
