Zucchini with minced meat is prepared quite simply, this is a delicate and very tasty dish with an interesting addition. In Turkish cuisine, boiled chickpeas are added to minced meat, in Russian cuisine - rice. The dish can be served with sour cream, yogurt or fresh vegetable salad.
Ingredients:
Zucchini (zucchini) - 800 gr.
Sweet pepper - 1 pc.
Bulb onions - 1 pc.
Minced beef - 300 gr.
Garlic - 2 cloves
Chickpea - ¼ stkn
Tomato paste - 1 tablespoon
Water - 200 ml.
Butter - 80 gr.
Red pepper - a pinch
Dried basil - ½ tsp
Salt to taste
Step by step recipe:
Step 1 - Prepare foods from the list. Large, overripe courgettes or zucchini are suitable for this dish.
Step 2 - Soak the chickpeas in cold water. We leave for 10-12 hours.
Step 3 - We wash it, fill it with a liter of water, send it to the stove. Cook from the moment of boiling for 40 minutes over low heat, then drain the water.
Step 4 - While the chickpeas are cooking, let's prepare the ingredients. Cut the zucchini into stumps so high that they fit in the pan under the lid. I have them 6-7 cm high. Cut off the peel and cut out the core with the seeds. If you have thin and long fruits, then cut them longer, and put them flat in the pan.
Step 5 - Vegetables - onions, bell peppers and garlic - peel and chop.
Step 6 - Heat half of the butter in a pan. Fry the zucchini over medium heat with two. Then we put them on a plate.
Step 7 - Melt the remaining butter in a pan. Fry lightly minced meat.
Step 8 - Add garlic, bell peppers and onions to the minced meat. We continue to fry over medium heat, stirring occasionally, for 5 minutes.
Step 9 - Remove from heat, salt, season with spices.
Step 10 - Add chickpeas to the minced meat and vegetables, mix.
Step 11 - Fill the fried courgettes with the filling, lightly tamping it with a spoon.
Step 12 - Put the stuffed zucchini-hemp in the pan in which the minced meat was fried.
Step 13 - Stir the tomato paste in a glass of water, fill in the blanks. Cover with a lid.
Step 14 - Bring to a boil and simmer the stuffed zucchini over low heat for 25 minutes.
Step 15 - Stewed squash with minced meat is ready.
