Taboule salad with cucumber and onion

“Tabouleh” is a very popular dish of Middle Eastern cuisine, and each country and even region has its own version of this salad. Somewhere it is prepared from bulgur, somewhere from couscous, someone adds cucumber and Bulgarian pepper to the main ingredients, and someone puts a lot of types of herbs - cilantro, basil, mint, parsley, dill. Today we will prepare the most popular version of the Tabouleh salad, which is served in all our restaurants serving Middle Eastern cuisine.

Ingredients:

Bulgur - 100 g

Tomatoes - 2 pcs.

Cucumber - 1 pc.

White sterling onion - 0.5 pcs.

Lime - 0.5 pcs.

Olive oil - 2 tablespoons

Salt to taste

Ground black pepper - to taste

Dried mint - 0.5 tsp

Parsley (or cilantro) - 20 g

Preparation:

1. Prepare all the necessary foods from the list. Peel the onion from the husk, wash the vegetables and herbs, dry. If the taste of fresh mint does not bother you in your dishes, use a few sprigs. And if you can't stand cilantro, you can safely replace it with parsley or dill.

2. Rinse the bulgur several times to clean water. Pour cold water in a ratio of 1 to 3, put on medium heat and simmer under a lid for 15 minutes, the liquid should boil completely, and the bulgur will triple in volume. When done, let it cool.

3. Cut white sweet sterling onions into very small cubes, pour over it with lime juice. While we prepare the rest of the ingredients, it will marinate. If sterling is too expensive, you can safely replace it with green onions, its white part.

4. Cut the tomatoes into small cubes along with the seeds. Peel the cucumber from the top and tail, chop the same way as tomatoes. Place the vegetables in a bowl with the pickled onions.

5. Add cooled bulgur, chopped fresh herbs, mint, salt and pepper to taste to a bowl with vegetables. Season the dish with quality extra virgin olive oil.

6. Stir the salad well, taste it, maybe add a little more acid in the form of lime juice or salt.

7. Easy to prepare, tasty, hearty and aromatic Taboule salad is ready.

8. Serve right away, before the tomatoes let out too much juice.
