If you are a working wife and mom, and you have no desire to stand at the stove for a long time after a hard day to feed your family, try making udon noodles with chicken and vegetables. This is a great quick family dinner recipe.
Ingredients:
Chicken thigh - 400 g
Udon noodles - 150 g
Onions - 50 g
Carrots - 70 g
Champignons - 100 g
Bulgarian pepper - 1 pc.
Garlic - 1 clove
Vegetable oil - 2 tbsp.
Hot pepper - to taste
Soy sauce - 1 tablespoon
Sea salt - to taste
Ch.m. pepper - taste
Parsley - 5 branches
Preparation:
1. Prepare all the necessary foods from the list. Peel the carrots, peel the onions and garlic from the husks, peel the seeds and stalk of the bell pepper. Remove the skin from the chicken thighs, carefully cut the bone. The thigh can be replaced with chicken fillet, it cooks even faster. Wash vegetables and chicken under running water, pat dry with paper towels.
2. Heat unscented refined vegetable oil in a frying pan, put onion chopped in half rings and carrots in thin slices. I grate it with a Korean carrot grater. Fry vegetables for 2-3 minutes.
3. Cut the chicken thigh into thin slices, add to the pan to the vegetables, fry them together for 5 minutes.
4. Next add bell pepper chopped into thin strips, small pieces of champignons, also put chopped hot pepper to taste and crushed garlic clove. If you cover the pan with a lid, the mushrooms will immediately start juicing and vegetables and meat will cook faster, and in their own juice. Simmer over medium heat for 5 minutes, after a while pepper, pour in soy sauce, if desired, you can lightly salt with sea salt.
5. Simultaneously boil water in a saucepan or stewpan, add a little salt, load udon noodles. Boil it until cooked according to the instructions. Typically, this is 4 to 6 minutes. I cook for no longer than 4 minutes.
6. Throw the finished noodles in a colander. Transfer it to the pan with the chicken with vegetables, add the chopped herbs. Mix everything thoroughly. Heat the udon along with the rest of the ingredients for one to two minutes.
Divide the udon noodles with chicken and vegetables into portions and serve immediately. Remember to catch and discard the garlic.
