Cheese cakes are an excellent addition to any salty dish instead of bread. They can also be served on their own with a cup of tea or milk.
You can cook the dish according to different recipes: you can add cheese to the dough itself or use it as a filling. The basis will be kefir, it is on this drink that the softest and most lush cakes are obtained that do not harden for a long time. But it is better to serve them to the table still in a warm form, while the cheese remains soft and aromatic.
You can fry cheese cakes in kefir both in a dry frying pan and in an oil pan.

Ingredients:
Kefir - 125 ml.
Sugar - 0.5 tsp
Salt - 0.3 tsp
Wheat flour - 200 gr.
Baking powder - 0.5 tsp
Vegetable oil - 1 tbsp.
Chicken egg - 1 pc.
Cheese - 200 gr.
Vegetable oil for frying - 1 tbsp.
Butter - 10 gr.
How to cook:
Prepare food.
Combine kefir with vegetable oil in a deep container. Pour in salt, sugar. Stir the mixture thoroughly so that the oil is completely distributed over the kefir and there is no oily layer on the surface.
Sift the flour through a sieve in advance. Pour into the main composition. At the same time, stir in the baking powder. When all the flour has been added, the dough can be kneaded with your hands.
The dough should be soft, elastic and pleasant to the touch, not sticky to your hands. Set it aside for a while, cover it with a towel.
Prepare the cheese filling in a separate container. Grind hard cheese with a grater. Beat the egg into the cheese shavings. Stir, lightly salt and pepper.
Sprinkle flour on the work board so that the dough does not stick to it. Divide one lump into small portions of approximately the same size. Roll them into balls.
Roll each ball into a thin layer, put the cheese filling in the middle (about 1 tablespoon).
Pinch the edges of the dough from above, as if hiding the filling inside.
Sprinkle flour on top of the workpiece, roll it back with a rolling pin, getting cakes. If the cheese stands out a little from the sides, it's okay.
The tortillas are ready to be fried in either a dry or an oil pan. There should not be a lot of oil, just grease the bottom with it. Place the blanks in a hot frying pan, fry over medium heat under a lid.
When one side of the cakes is browned, flip them over to the other. Fry the same way. They will increase in size and rise slightly.
After frying, grease each cake with butter. Enough on the one hand.
Serve the cheese cakes warm together with sour cream.
