One of the most popular summer vegetable dishes in our region is stewed squash with tomatoes. As soon as they do not cook! I want to share my favorite recipe, which "lives" in my cookbook for 20 years for sure. The appetizer is prepared simply and quickly, it turns out delicious both hot and cold. The most delicious, in my opinion, is to serve it with baked chicken, mashed potatoes and fresh bread. Try it!

Ingredients:
Zucchini - 400 g
Tomatoes - 3 pcs.
Bulb onions - 1 pc.
Carrots - 40 g
Garlic - 1 clove
Lean oil - 2 tablespoons
Parsley - a few twigs
Salt to taste
Sugar - optional
Ch.m. pepper - taste
Tomato sauce - 1 tbsp
How to cook:
Prepare foods from the list. Peel the onions, garlic and carrots. Then wash under running water along with zucchini and herbs, dry.
Heat some lean refined oil in a frying pan, put onion chopped into half rings and finely chopped carrots. Fry over medium heat until soft.
Peel the zucchini from the stalk, cut into convenient slices, add to the pan. Mix vegetables gently and simmer for 5-7 minutes.
For tomatoes, remove the stalk. Next, cut them into cubes, transfer to the pan. Simmer for another 7-10 minutes.
Now the zucchini must be gently stirred with the back of a spoon, being careful not to break them. Tomatoes, by the way, can be grated and the peel thrown away, it also turns out deliciously.
After a while, pepper the dish and salt to taste. Add minced garlic and tomato sauce. Simmer for a couple more minutes.
Then you should definitely try the gravy. If the tomatoes were too sour, then add a little sugar to adjust the taste. If everything suits, add chopped fresh herbs, stir.
Turn off the stove and cover the pan with a lid. Leave for 15 minutes for all the flavors to mix.
Serve prepared stewed zucchini with tomatoes with your loved one meat dish and mashed potatoes. It is very tasty to pour such a potato side dish with gravy from vegetables, and you can also dip it in fresh bread. Recommend.
