Today I propose to cook an incredibly tasty and simple blue dish with minced meat and tomatoes in the oven. There are several options for preparing Turkish eggplants. One of them is in a spicy tomato sauce with walnuts, but this dish is specific and not everyone likes it. Our version is simpler, with fewer spices and a more natural flavor.
Ingredients:
Minced meat - 400 g
Eggplant - 400 g
Tomatoes - 3 pcs.
Salt to taste
Ch.m. pepper - taste
Seasoning mixture - 1 tsp
Lean oil - 2 tablespoons
How to cook:
Prepare foods on the list. Wash the eggplants together with the tomatoes under running water and dry.
As a rule, the minced meat for this recipe is taken from beef, lamb, chicken or turkey. Pork is not used in Turkish cuisine for obvious reasons. I took the minced turkey thigh.
Transfer the minced meat to a deep bowl. Season with salt and pepper to taste, oriental seasoning mix. It contains cumin, dried mint, oregano and several other aromatic herbs. When adding spices, lightly rub them between your fingers, so they maximize their flavor to the meat. Stir the minced meat until smooth, leave to "ripen" for a while.
Cut the eggplants into slices, add a little salt. Fry quickly in a hot skillet in a minimum amount of lean refined oil, cool slightly.
Place a small amount of flavorful minced meat on each round of eggplant.
Cut the tomatoes into thin slices. Then put a slice of fresh tomato on top of the minced meat. Do the same with the rest of the ingredients.
Lightly grease a baking dish with vegetable oil. Put in it circles of eggplant with minced meat and tomatoes (as in the photo), add a little salt and pepper.
Send to an oven preheated to 180 degrees for 40-50 minutes. Bake on top and bottom heat.
Serve the finished dish in the same form in which it was baked.
