This salad is served fresh, immediately after harvest - there is no need for long-term impregnation. Light, tasty, goes well with any side dishes from cereals, vegetables to pasta and, of course, with meat, poultry, fish.

For a bachelorette party and a snack, a salad with arugula and tomatoes is suitable on its own, for a large-scale feast - as an appetizer, for hot and grilled dishes. If you're in a hurry, simply mix all the ingredients with the dressing. When a neat presentation is required, lay out on a spacious plate in contrasting circles, as shown in this recipe.

Ingredients:

Arugula - 150-200 g

Tomatoes (large) - 2 pcs.

Parmesan cheese - 20 g

Olive oil - 30 ml

Balsamic vinegar - 20 ml

Salt, hot pepper - to taste

Step by step recipe:

Step 1 - To assemble a salad mix with tomatoes and arugula, you need the products on the list. Two large tomatoes are enough, be guided by size / weight. Choose ripe, aromatic, strong, thin-skinned and fleshy varieties. Discard the lethargic, dry, flawed arugula right away - for a salad without heat treatment, the freshness of vegetables and vegetation is important.

Step 2 - We wash the tomatoes and arugula branches in cold water, rinse thoroughly, remove dust, possible residues of soil, small insects. Especially if the greens are tomatoes directly from the garden. We tear off the stalks from tomatoes. Lay out on a woven or paper towel - dry. We do not think that the tender arugula does not wilted ahead of time.

Step 3 - Cut the tomatoes in half, remove the rough stems and chop them into thin (about 3 mm) slices. Cherries and too small can be cut into circles, quarters. In fact, the method of cutting is not of fundamental importance - feel free to act on a whim, inspiration.

Step 4 - On a flat plate with a diameter of 24 cm, first lay out the clean and dried arugula. Then overlap on the "pillow" of vegetation and place the tomato slices in a circle. Fill the free center with three slices.

Step 5 - Sprinkle the semi-finished product with Parmesan cheese, from the Pecorino family, or whatever you wish. Mature varieties with three almost transparent slices or shavings, soft - crumble, elastic brine - we cut arbitrarily.

Step 6 - Arugula Tomato Salad Dressing consists of natural vinegar, olive oil, salt and hot pepper. Own expressive mustard, with a speck of arugula allows you to get by with a minimal set of seasonings. Sprinkle and water. All!
