A potato baked with mushrooms in sour cream is a delicious dish for every day, and for a hearty lunch it can serve as a side dish for poultry and meat. It is prepared in two stages: first, mushrooms and onions are fried over an overhead fire, then raw potatoes, fatty sour cream are added and everything is sent to languish in the oven.

Choose sour cream with a high percentage of fat, chop the potatoes as thin as possible, almost transparent slices. Then the vegetable layer will steam evenly.

Ingredients:

Potatoes - 500 g

Champignons - 150 g

Onions - 1 pc.

Sour cream - 150 g

Lard / bacon - 50 g

Salt, black pepper - to taste

Step by step recipe:

Step 1 - Take the listed products. If you are replacing fresh mushrooms with other dried mushrooms, soak them in water to swell and then boil until softened. Without lard or lard in stocks, fry in any vegetable oil. Animal fat makes potatoes more nutritious, with a characteristic rustic flavor.

Step 2 - Preheat the pan, add pasty lard or drown a piece of bacon. We spread the onion cut into small cubes. Toss in a pinch of salt for a quick caramelization of the onion. Stir and sauté for 3-4 minutes until transparent and golden. Do not let the onion slices darken and burn.

Step 3 - Load pre-washed, dried and chopped mushrooms. Choose the size of the cut yourself. Large mushroom pieces are also suitable here. Stir again and fry for another 3 minutes.

Step 4 - Simultaneously wash and peel potato tubers. Shred with thin circles. It is most convenient to use a shredder grater, but you can do it with a regular knife. Season with salt and ground hot pepper.

Step 5 - Add sour cream to the potatoes - mix, covering each slice on both sides. Next, add the fried onion-mushroom mixture. Turn over again from bottom to top.

Step 6 - Fill the oiled refractory mold with prepared potatoes with champignons and put them in a hot oven under a sheet of foil. We bake for about 30 minutes at 180 degrees. Lightly char the last 5 minutes without foil.

Step 7 - Serve homemade potatoes with mushrooms in hot sour cream, with a salad of fresh vegetables and herbs.
