Whole-baked stuffed pumpkin in the oven

It is very simple and delicious to bake pumpkin in the oven, this is an amazing vegetable. You can use a variety of fillings, including sweet ones. Today I suggest trying this option: rice, vegetables and meat. In Russian cuisine, there is also a filling with buckwheat and meat, but we are more accustomed to baking pumpkin with rice. Vegetarians can stuff it with sauteed vegetables and mushrooms. In any case, it turns out delicious, because the pumpkin impregnates all the other ingredients with its aroma. Diversify your daily menu with whole baked stuffed pumpkin.

Ingredients:

Pumpkin - 1 pc.

Rice - 1/3 stkn.

Bulb onions - 1 pc.

Butter - 70 gr.

Chicken fillet - 150 gr.

Sweet pepper - ½ pc.

Salt and spices to taste

Step by step recipe:

Step 1 - We prepare the necessary products according to the list. Chicken fillet can be replaced with pork or any minced meat. Choose a pumpkin that is not too large, elastic, with a bright orange pulp.

Step 2 - Rinse the rice. Boil in boiling salted water for 15 minutes. We drain the water.

Step 3 - Rinse and dry the chicken fillet with a napkin, cut it into small pieces.

Step 4 - We peel the onions from the husks, sweet peppers - from the seeds and partitions. Cut vegetables into small cubes.

Step 5 - Heat the butter in a pan. Fry the onion and pepper until half cooked, stirring occasionally, for 5-6 minutes.

Step 6 - Combine rice, chicken fillet, fried onions and peppers in a cup. Salt and season with spices to taste. I added ground basil and some paprika.

Step 7 - Preparing our pumpkin. We cut off the small diameter cap.

Step 8 - Take out the pulp and seeds with a spoon or with your hands. Cut off the bottom of the pumpkin cap.

Step 9 - Fill the pumpkin with the rice and meat filling. If desired, place fresh basil or thyme herbs under the lid.

Step 10 - Place the stuffed pumpkin on an oiled baking sheet / baking dish or skillet. We put in a preheated oven to 180 degrees and cook for about an hour or until fully cooked at your discretion. Roasting time depends on the size of the pumpkin. We check the readiness by piercing the vegetable pulp with a knife.

Step 11 - The baked, stuffed pumpkin is ready. When serving, cut it into portions.
