This simple, and most importantly, healthy recipe for rice with vegetables in the oven will surely be appreciated by all lovers of proper nutrition, vegetarians and fasting people. Only fresh vegetables and rice groats are used for its preparation. Of course, there are a lot of options, but there are no meat ingredients in this recipe and the amount of vegetable oil is very small. If you're on a diet, a serving of baked rice with juicy, flavorful vegetables won't hurt you.
Ingredients:
Rice - 100 g.
Carrots - 100 gr.
Bulb onions - 90 gr.
Sweet pepper - 100 gr.
Tomato - 100 gr.
Zucchini - 120 gr.
Pumpkin - 100 gr.
Ground black pepper - to taste
Salt to taste
Smoked paprika - 1 tsp
Italian herbs - 1 tsp
Olive oil - 2 tablespoons
Garlic - 1-2 cloves.
Step by step recipe:
For baking, choose rice grits of your choice. Long grain rice is used most often. During the cooking process, the grains do not stick to each other and are crumbly. Round grain rice contains more starch, so after cooking it looks more like a creamy mass.
Start your culinary journey by preparing all the ingredients in the recipe.
Peel the onions and garlic. Be sure to rinse and pat dry with a paper towel. Grind into small pieces. If you don't like garlic flavor, eliminate garlic cloves from the recipe.
Take sweet peppers in different colors so that the end result will delight you not only with a delicate taste, but also with a colorful look.
Rinse vegetables in cold water, cut in half and remove seeds. Rinse again to remove any remaining seeds and pat with a towel. Then cut into small pieces.
Peel carrots and pumpkin, rinse. Cut both ingredients into small slices.
Use a curly knife to cut the baked vegetable slices for a more appealing look.
Rinse the ripe tomato and zucchini, pat dry to remove excess moisture. Cut the stem off the tomato. Cut the vegetables into small cubes with the same curly knife.
If you have more mature courgettes in your refrigerator, remove the skins and seeds and use the pulp for cooking.
Transfer all prepared vegetables and well-washed rice to a deep container.
Add salt, ground black pepper, Italian herbs, smoked paprika. When adding spices, be guided by your taste. Mix gently.
Take a deep baking dish. Add oil. Move rice with vegetables. Add boiling water almost to the top. Cover the dish with foil and send the dish to bake in the oven for 50-60 minutes at 180 degrees.
Rice with vegetables in the oven is ready. Remove from the oven and leave for another 10-15 minutes without removing the foil.
Pour into plates or leave in a mold, garnish with herbs.
