Rice noodles with chicken and vegetables

Rice noodles are the favorite dish of the people of Japan and China. Recently, it has become quite popular with us. Dishes with her are distinguished by their unpretentiousness, quick preparation and light spicy taste.

Rice noodles go well with seafood, meat, poultry, vegetables.

My version of the noodles is with chicken and vegetables. Use the last ones that you love and that are combined with each other. Most often, an almost finished dish is seasoned with soy sauce or "Teriyaki", and we will cook it at home.

Ingredients:

Rice noodles - 200 gr.

Carrots - 2 pcs.

Onions - 1 pc.

Bulgarian pepper - 2 pcs.

Cherry tomatoes - 100 gr.

Chicken fillet - 350 gr.

Frozen peas - 50 gr.

Frozen corn - 50 gr.

Soy sauce - 100 ml.

Garlic - 3 cloves.

Natural honey - 1 tbsp.

Mustard -1 tsp

Ground ginger - 1/2 tsp

Olive oil - 2 tbsp.

Corn starch - 1 tsp

Salt to taste.

Ground black pepper to taste.

Ground chili - ΒΌ tsp

Ground sweet paprika -1/2 tsp

Prepare all ingredients as listed. Instead of frozen vegetables, you can use fresh vegetables, or take a ready-made Mexican mixture from the freezer. Defrosting is optional.

Cut the onion into feathers, carrots into thin cubes.

Rinse the chicken fillet, dry and cut into thin strips.

Cut the bell peppers into thin strips too. Cutting vegetables and chicken in this way will look more impressive in the finished dish.

Pour the olive oil into a deep skillet or wok and fry the chicken with onions and carrots. No need to fry until golden brown, only until soft. Fry over a slightly above average heat, stirring constantly.

Add frozen vegetables and cook for another 5-7 minutes.

Cut the cherry in half.

At this point add the bell peppers and tomatoes, season with the prepared spices, stir and cook for 3 minutes.

Put the rice noodles in a saucepan and cover with boiling water for 2-3 minutes.

To make Teriyaki sauce, combine soy sauce, minced garlic, ginger, starch, mustard and honey in a bowl. Stir so that there are no lumps.

Throw the noodles on a sieve, rinse under cold water and transfer without liquid to the pan, add the prepared sauce and cook for another 5 minutes.

Serve hot vegetable and chicken rice noodles.

By itself, rice noodles have almost no taste, so they are enriched with spices, sauces and other ingredients. It is quite satisfying, so it will perfectly replace a full dinner or lunch.

In my opinion, spoiling such noodles is almost impossible. As an additive, it is good both with meatand with vegetables. Very tasty with seafood.

For spicy lovers, I would also recommend adding a pod of fresh chili, and replacing dried ginger with fresh one. Then sprinkle the finished dish with cilantro leaves - it will be very aromatic and tasty!
