This is truly the best khachapuri recipe I've tried! Plus, it's very simple! I refused other recipes long ago!
Sift flour into a bowl. I add the egg white. The yolk will be needed a little later.
I also send salt, vegetable oil and sour cream here. I knead everything first with a spoon, then with my hands.
The dough is soft. It shouldn't stick to your hands. If it sticks, I add a spoonful of flour. I put the dough in a bag and leave it for half an hour (it can be on the table).
For the filling, I take any pickled cheese. You can use cottage cheese. But it is most delicious with Adyghe cheese. I usually cook with him. Add the egg yolk I had set aside and two teaspoons of melted butter. I mix well.
I divide the dough into 6 parts.
I roll out each part 4-5 mm thick, put a few spoons of filling in the middle, put it in a "bag". Like this:
Then I press down a little and roll it out again (already with the filling) to get such a cake:
I spread it in a dry frying pan and fry it over low heat. First, on one side for about 3-4 minutes.
Then I turn it over, cover the pan with a lid and cook for a few more minutes. The flatbread will slightly inflate - it should be so.
I put the finished cake on a plate and pour it with melted butter.
Serve with sour cream. It's very, very tasty! Just try it! Everyone I treated to these cakes asked for more))
