A recipe for those who love pea soup. I just love it! I will share my recipe. Delicious and hearty pea soup with smoked shank and crispy flavored croutons. It's very, very tasty!
I send the boiled-smoked shank into cold water (you can take smoked ribs, but I like the shank better). Cover with a loose lid and cook for 15-20 minutes.
I pre-soak the peas (at least for 2-3 hours). I'm sending the peas to the pot. And I cook the peas until cooked. Time depends on the peas themselves! This time, 40 minutes was enough for me. I take off the foam from above.
Fry finely chopped onion in a pan. Then I add the diced carrots and some sugar. Sugar can of course be eliminated. But it tastes better with him.
After a couple of minutes, I send the celery into the pan. If you don't like the taste of celery, don't add. I fry for a couple more minutes.
When the peas are ready, I send the diced potatoes to the pan. Salt to taste. I cook for 10 minutes (until the potatoes are ready).
After 10 minutes, I take the shank out of the pan and cut the meat off it. Cut into portions and send back to the pan.
There are also fried vegetables. And a bay leaf. I stir and boil for a couple of minutes.
I let it brew for 15 minutes. And you can serve!

• Dry peas - 400 g
• Potatoes - 250 g
• Carrots - 1 pc.
• Onion - 1 pc.
• Celery - 40 g
• Sugar - 0.5 tsp.
• Bay leaf - 1 pc.
• Salt
