Hello friends! This is "Kitchen Inside Out". Sponge cakes. They are just perfect for sweet fillings and cakes!
Here I need 4 eggs. I separate the yolks from the whites. I add a pinch of salt to the proteins, sugar and vanillin to the yolks.
Beat the whites until stable peaks. Grind the yolks with sugar, add milk and mix well.
Gradually add flour. Not all at once, but in parts. I stir it with a whisk so that there are no lumps.
Then I pour in mineral water. And beat well again. Gradually (in parts) add the proteins and mix very gently. I do not whip! I just mix it up.
The dough turns out to be airy, similar to foam. Its consistency can be clearly seen in the video below:
I grease the pan with oil only for the first time. I pour the dough and distribute well. It is not as liquid as for regular pancakes, but it still spreads well. The main thing is to do it quickly))
I bake the pancake on one side until bubbles appear. Then I turn it over, wait about another minute and remove it from the pan.
Pancakes can be easily turned over and easily removed. Usually it turns out 8-10 pieces. The diameter of my pan is 24 cm.
Such pancakes can be prepared with any filling (in the photo I have with apple - how I cooked it is also in the video). You can simply serve it with your favorite jam.
Or make a delicious cake! Biscuit lovers will definitely appreciate it! Here I have a curd cream with whipped cream.
I let you soak for at least 2 hours - and you can treat yourself to it)) A very delicate and very tasty cake turns out. No worse than biscuit. ONLY WITHOUT OVEN!
