Hello friends! This is "Kitchen Inside Out". When I was a girl, I did not see any difference between dumplings and dumplings. Both are boiled dough. But when I started cooking, I realized what the difference was.
Dumplings are pieces of dough boiled in water or broth. They are prepared from both wheat flour and buckwheat; potatoes, cottage cheese, grated apples, semolina, garlic are often added to the dough... Serve with first courses, as a side dish or as an independent dish. You can cook dumplings without eggs (I have lean soup recipe with such dumplings)
Today, on my YouTube channel, I shared a recipe for dumplings (this is how my grandmother cooked).
The dough here is very simple. Sift flour, add water, then eggs mixed with salt and melted butter. I knead a smooth soft dough.

I put the finished dough in a bag and leave it for 20 minutes. Then I spread it on a board, roll it out 5-6 mm thick and cut into small cubes.
In fact, it doesn't matter how you cut, you can use rhombuses, rectangles - all the same. I love it when the dumplings are small, but the size can also be different.
You don't have to cut the dough. When I have no time, I simply pinch off pieces of dough and throw them into the water. It turns out not so smooth, but still tasty)) But I like the squares more:
Boil in salted water until tender. It's about 10 minutes. I filter it through a sieve.
You can serve in different ways!
First submission option - with butter.
I heat butter in a frying pan. I spread the ready-made dumplings and fry for several minutes over high heat. Serve with sour cream.
You can brown it more or not fry at all - whoever likes it))
Second filing option - with mops.
I cut the bacon into small cubes, fry in a pan. And then I send the greaves into a plate with dumplings. You can add fried onions - it will be even tastier))

Basically, it's almost the same. Dumplings differ little from dumplings in taste, and they are served similarly. But dumplings are made from a thinner dough. All the ingredients are mixed in a bowl and then dipped directly into the broth or salted water with a spoon. It must include flour and eggs.
The dumplings are usually round or oval in shape. More often they are added to first courses.
