There are never too many pancakes! Especially on Shrovetide!
The recipe is simple. The pancakes are delicious. But only 9-10 pieces come out of the specified ingredients. It seemed to us a little)) Therefore, it is better to cook a double portion at once.
To make the pancakes more magnificent and tender, I separate the yolks from the proteins. I found out that this secret "works" for any pancakes.
I add sugar and vanillin to the yolks. I mix well with a whisk.
And pour in the milk. Mix again. And gradually I add the sifted flour. I mix it very carefully so that there are no lumps left.
Then I pour in mineral water. I buy not just water with gas, but mineral water. So the pancakes are tastier))
I add a pinch of salt to the proteins and beat until stable peaks. I add them to the dough. Not all at once, but also gradually. And mix gently with a spatula. No need to whip. No mixer or whisk! With a spoon or a spatula, "mix" the proteins into the dough very carefully!
The dough is very tender and airy, with fine bubbles.
I bake pancakes in a well-heated frying pan. The first time I grease the pan with oil. I pour the dough and distribute.
When bubbles appear, you can turn it over.
Pancakes are easy to turn over (do not tear) and can be easily removed from the pan. I talked about my pans (and about my other dishes) HERE.
I put it in a pile. You can grease hot pancakes with a slice of butter.
Or you can serve it with a filling. For the filling, I heat a little butter in a frying pan. I add apples grated on a coarse grater, add sugar and cinnamon to taste. I stir and simmer for a few minutes.
Then I put the filling on the pancake and roll it up.
You can make a cake from such pancakes. I really like the cottage cheese cake. How delicious it is!

• Milk - 150 ml
• Mineral water - 80 ml
• Flour - 130 g
• Sugar - 2 tbsp.
• Salt - a pinch
• Vanillin - 1 g
