Today I want to suggest you to cook multilayer cakes from curd dough. The dough is prepared without yeast, very quickly.

Easter cakes are very tasty, soft and aromatic.

I made one cake with raisins, the other with cinnamon. You can cook with prunes, dried apricots, poppy seeds, chocolate, coconut to your taste.

Let's cook

  • pour 1 egg into the bowl
  • add a pinch of salt
  • 100 grams or 5 tbsp. tablespoons without top sugar
  • 10 grams or 2 tsp tablespoons of vanilla sugar. Vanilla sugar can be added to taste
  • 60 grams or 6 tbsp. tablespoons of vegetable oil
  • 200 grams of soft cottage cheese, the fatter the better. I have cottage cheese with a fat content of 9%, soft, without grains, easily rubbed with my fingers. If you have cottage cheese with grains, then it is better to wipe it first through a sieve

Mix everything together with a blender until smooth.

  • pour in 40 grams or 3 full tbsp. tablespoons of freshly squeezed orange juice. Orange juice in this recipe can be replaced with 2 tbsp. tablespoons of freshly squeezed lemon juice

Stir until smooth.

  • sifting, add some of the wheat flour
  • 8 grams or 1.5 tsp. baking powder for dough

  • then gradually add flour and knead the dough. 200 grams of flour can be added boldly, and add the rest of the flour gradually

I needed 240 grams of wheat flour, but you look at your dough, since everyone has cottage cheese different in moisture and egg weight may be different, so you may need a little more or less flour.

The dough should not be hammered with flour, it should be soft. It seems sticky, but it doesn't stick to your hands.

Cover the dough with a lid or cling film and let it rest for 10-15 minutes.

The filling can be different, I will use for the filling

  • 80 grams of raisins, raisins must be washed and dried in advance
  • 50 grams of chopped roasted peanuts. Peanuts can be substituted with any nuts you like
  • 180 grams of orange jam. Jam or jam, you can take any to your taste

Next, the cake is cooked quickly enough, so do not forget to turn on the oven and heat up to 180 degrees.

  • Sprinkle the work surface lightly with flour and spread the dough
  • roll out the dough into a rectangle. I got a rectangle measuring 42 by 30 cm, about 3-4 mm thick

  • first grease the entire layer with jam. If you cook cake with cinnamon, then instead of jam, grease the layer with melted butter

  • then sprinkle with raisins, if desired, you can take prunes, dried apricots or candied fruits. If you are cooking cake with cinnamon, then sprinkle the greased layer with sugar mixed with cinnamon

  • sprinkle with roasted chopped peanuts at the end. If you are making a cake with cinnamon, then at the end, sprinkle it with roasted chopped peanuts too.

  • twist the layer into a roll, pinch the edge and ends
  • we cut the roll in the middle along, without cutting from one edge to the end

Next, we twist it in a spiral, lifting and laying over the first circle.

We try to lay it so that the incision is outside.

Carefully transfer the cake to parchment paper and place the cake together with the paper in a baking dish.

I bake in a detachable dish with a diameter of 13 cm. I close the side of the mold with Teflon tape, instead of it you can use parchment paper.

We remove to bake in an oven preheated to 180 degrees for 80-90 minutes.

At first, I do not cover the form with anything, 40 minutes after baking, I cover the form with the dough with parchment paper and continue to bake further.

The baking time depends on the size of the dish and your oven.

My cake was baked for 85 minutes.

We check the readiness with a wooden stick. We pierce, if the shelf comes out dry, without residues of wet dough, then the cake is ready.

We release the cake from the form and put it on the wire rack.

Remove the teflon strips and parchment paper.

Leave to cool on wire racks to room temperature.

Ingredients designed for 1 cake with a diameter of 13 cm, a height of 10 cm.

In 1 tablespoon without top - 20 grams of flour, with top - 30 grams.

In 1 tablespoon without top - 20 grams of sugar, with top - 25 grams.

Dough

200 grams of soft cottage cheese (the fatter the better)
1 egg
100 grams (5 tbsp. tablespoons without top) sugar
10 grams (2 tsp. spoons) vanilla sugar
a pinch of salt
60 grams (6 tbsp. spoons) vegetable oil
40 grams (3 full tbsp. spoons) orange juice
+/- 24 0 grams (12 tbsp. spoons without top) wheat flour
8 grams (1.5 tsp. spoons) baking powder for dough

Filling 1 (with this filling, the weight of the cake is 955 grams)

180-200 grams of jam or preserves
80 grams of raisins
50 grams chopped roasted peanuts

Filling 2 (with this filling, the weight of the cake is 800 grams)

25-30 grams of melted butter
100 grams (5 tbsp. tablespoons without top) sugar
3 grams (1 tsp. spoon) cinnamon
50 grams chopped roasted peanuts
