According to this recipe, a very tasty pork belly baked in the oven comes out. This is a great cold appetizer for strong drinks on the festive table. It looks great, both as part of a meat plate, and on its own. Any vegetables and herbs are suitable for it. It's also a great alternative to sausage on sandwiches.
Such brisket in the oven turns out to be very tasty and appetizing. It is saturated with aromas of spices and garlic through and through, and a ruddy crust flaunts on top. Due to preliminary soaking in brine, the meat is tender and very tasty.
It is not difficult to prepare such an appetizer, but it will take time to marinate. So it is better to cook such a brisket on the eve of a feast.

Ingredients:
- pork belly - 1 kg
- garlic - 1 head
- barbecue seasoning - 1 tbsp. l.
Marinade:
- water - 1.5 l
- salt - 2 tbsp. l.
- barbecue seasoning - 1 tbsp. l.
- mustard seeds - 1 tsp l.
- black peppercorns - 10 pcs.
- bay leaf - 2 pcs.
Sauce:
- ground sweet paprika - 1 tbsp. l.
- honey - 1 tsp l.
- water - 2 tbsp. l.
Step by step recipe:
1. First, let's prepare the brine.
Pour 1.5 liters of water into a saucepan. Pour 2 tbsp. with a slide of salt, put 10 black peppercorns, 1 tsp. mustard seeds and 2 bay leaves. Pour 1 tbsp here. seasonings for barbecue.
We put everything on fire and mix. When the water boils, cook it for another 1-2 minutes and remove from heat. Let the marinade cool completely to room temperature.
2. Put 1 kg of pork belly in the cooled marinade; first, it must be well peeled and washed. We leave it to marinate for at least 6 hours, I left it overnight.
3. The night went, everything was pickled. Remove the pork brisket from the brine and wipe it on all sides with paper towels. It is better to choose pork belly with more meat.
Squeeze 1 head of garlic onto the meat through a press. Sprinkle everything on top evenly for 1 tsp. l. seasonings for barbecue.
4. Spread the seasonings with your hands on the brisket from all sides.
Tie the prepared brisket with culinary thread. It can be replaced with ordinary cotton thread folded several times.
5. Grease the baking dish with vegetable oil. Put the prepared brisket into the mold.
Cover the form with a lid or foil.
We put everything in the oven preheated to 180 degrees. We bake for 1 hour.
6. Cooking the sauce.
We take 1 tbsp. sweet red paprika and add 1 tsp. l. honey. Pour 2 tablespoons here. water. We mix everything.
7. 1 hour has passed, take out the brisket and grease it on top with the prepared sauce with honey. We leave about a third of the sauce, it will come in handy later.
Again we put in the oven to bake for 10-15 minutes. We no longer cover with foil.
8. 15 minutes passed. Turn the brisket over. Lubricate it with sauce on the other side. Again we put in the oven to bake for 10 minutes.
9. The brisket is ready, turn it over and leave to cool.
Cut the cooled brisket into portions and serve. It tastes good both warm and cold.
