Delicious strawberry compote for the winter, which will replace purchased drinks. Such a compote turns out to be richly strawberry, moderately sweet and with a slight sourness and lemon aroma. Well, mint gives it a special and unique refreshing taste. This is a real strawberry mojito in a jar!
To prepare such a strawberry compote with mint for the winter is very simple and fast enough. I highly recommend pouring boiling water over strawberries only once. So it will remain intact and vitamins will be preserved as much as possible in the drink. Also, if desired, you can add a little less sugar to the compote.

Ingredients (for a 3 liter jar):
- strawberries - 1/2 kg
- sugar - 200-300 g
- lemon - 2 circles
- mint - 2 sprigs
- steep boiling water - 2.5-2.7 l
Step by step recipe
1. First, let's prepare all the ingredients.
I will immediately close two 3-liter cans of compote. We take 1 kg of strawberries, wash and tear off the stalks. Cut half a lemon into slices about 5 mm thick.
2. We take 2 well-washed 3-liter jars. You do not need to sterilize them.
Pour 0.5 kg of strawberries into each of the cans.
Place 2 slices of lemon each.
We also put 2 sprigs of fresh mint in each jar. Mint gives the compote a unique freshness.
3. Pour 300 g of sugar into each jar. That's about 1.5 cups. If desired, sugar can be added not 300, but 200 g.
4. We sterilize the lids.
We put 2 lids in a saucepan and fill them with water so that it completely covers them. We put on fire. When the water boils, boil the lids for literally 10-15 seconds and remove from heat and drain the water.
5. Pour about 2.5 liters of water into a clean saucepan. We put on fire. The water has boiled, remove it from the heat and immediately pour it into a prepared jar with strawberries.
6. We put the sterilized lid on and roll up the jar. To make the sugar dissolve faster, roll the closed jar gently and briefly on the table
7. We turn the jar upside down. In the same way, pour boiling water and roll up the second jar. Cover the inverted jars with a blanket or towel and leave it until it cools completely.
When the cans are cool, turn them over and put them in storage in the closet or basement.
