Delicious homemade cake with only four available ingredients. It is prepared quite quickly and very simply from cookies, sour cream and condensed milk. You don't need any gelatin or oven. Even a child can handle the preparation of such a cake.
To thicken the sour cream, we will use only lemon juice and no chemical powders! Instead of purchased cookies, you can bake a biscuit cake.
This homemade no-bake cake is great for tea with a cozy family circle. And for your morning cup of coffee, it is also good.
Be sure to try making such a delicious and cozy cake without baking and without gelatin, it's very simple!

Ingredients:

  • sour cream 25% - 400 ml
  • not boiled condensed milk - 1 can (380 g)
  • shortbread cookies - 320 g
  • lemon juice - 100 ml (1.5 lemons)

Step by step recipe

1. First, let's prepare the cake cream.
Squeeze the juice out of the lemon. All you need is 100 ml of lemon juice. I used 1.5 lemons.

2. Pour 400 ml of sour cream of the highest fat content into a bowl. I have sour cream with a fat content of 25%. To this we add 1 380 g can of unboiled condensed milk. Mix everything with a whisk.

3. Gradually pour 100 ml of lemon juice into this mass, while constantly stirring. Sour cream will begin to thicken from lemon juice, and after a while it will thicken even more.

4. Cover the form in which we will fold the cake with cling film. This is done to make it easier to reach. The size of my mold is 25 * 11 cm.
Put some cream on the bottom of the mold.

5. Put a layer of chocolate shortbread on it. When laying out the cookies, try not to touch the sides of the form so that the cake comes out with beautiful white sides. Put the cream back on. Lay out the cookie layer. If the whole cookie does not fit, then cut it to size with a knife. This is how we fold the whole cake. I got 5 layers of cookies. In total, it took 320 g of cookies. Cover everything on top with cream.

6. We cover the form with cling film and put in the refrigerator to infuse for 4 hours, or better for the whole night.

7. The cake is frozen. Remove the cling film and turn it over onto a dish. Carefully remove the film from the cake. Smooth the sides of the cake with a knife.

8. One cookie with crumbling hands. We decorate the cake on top with the resulting crumb. I also garnished the cake with lime and lemon zest.

Serve the finished cake.
The cake without baking turned out to be very tasty and tender. Delicate sour cream with a slight acidity of lemon goes well with well-soaked chocolate chip cookies. Be sure to cook such a cake, it is very tasty and simple.
