It doesn't matter what kind of meat you have cutlets - beef, chicken, pork, lamb, etc. Or maybe fish in general. For example, I cook different ones and the cutlets are always juicy.
And here are some of my cooking secrets. Hope it will be useful for you too.
Secret first
For the first minute, fry the cutlets over high heat to form a crust. It kind of "seals" all the juices inside, so the cutlets are juicy.
Second secret
I fry the cutlets under the lid. Steam does not leave the pan, which means the cutlets will not be dry. And here it is important to choose the right fire, fry on medium, but so that the cutlets are fried, and not stewed.
The third secret
And the most important. This is the size of the cutlets. The very case when size matters))) The larger the cutlet, the juicier it is. Of course, you do not need to go to extremes and make them huge on the floor of the pan. Just make more than usual and you will be surprised that the patties will be tastier.
The fourth secret
And one more piece of advice. Don't overcook the patties. On average, they cook for 10 minutes on each side. The longer you fry, the drier they will be.
