Greek soup " Yuvarlakia" took the recipe from a friend from Greece

Soup with meatballs in Greek "Yuvarlakia". This soup differs from the usual soup with meatballs in the cooking technology and, of course, in taste. In my family, this soup is always eaten with pleasure, I am sure to cook it and your family will appreciate it.

Recipe:

water -2l

carrots - 1 pc

onion -1pc

salt - to taste

greens to taste

eggs -2pcs

lemon juice -3-4 tbsp

flour -1 tbsp.

for meatballs:

minced meat-500g

salt -1 / 2 tsp.

rice -100g

onion -1pc

parsley to taste

eggs -1pc

water -50-70ml

COOKING METHOD

And so let's cut and twist the meat, you can take the ready-made minced meat. Everything is at your discretion. Let's measure out 500 grams of minced meat. Chop 2 onions finely and chop with a knife and add to the minced meat, now rinse with 100 grams of round rice and add to the minced meat, you do not need to boil the rice beforehand.

Optionally, chop the parsley and add minced meat. Add a little more than half a teaspoon of salt, you can add spices if desired.

For softness, pour in about 50-70 ml of water, and to keep the meatballs in shape, add 1 egg. Once again, knead everything well and form the meatballs. I take minced meat in half a tablespoon, by weight it is 20 grams. Cut the carrots into slices, cut the onion into small cubes.

We take the pan, I pour 2-3 tbsp of vegetable oil directly into the pan. L put the carrots, fry for 2 minutes and add the onion, fry for another 2 minutes. Now pour in 2 liters of water, it is better to fill it with hot water, as it boils, lower the meatballs. Close the lid and cook for 30 minutes until the meatballs are ready.

Now let's prepare the gas station. Divide 2 eggs into white and yolk. Beat eggs separately, yolks separately. Now add 3 tbsp to the yolks. L lemon juice, mix. And pour in to the proteins, mix everything again, add 1 tbsp. L flour and mix so that there are no lumps. As the meatballs are cooked, take 2 ladles of broth and pour into the eggs, mix, and then pour into the pan, stirring constantly. Cook over low heat for 2 minutes, sprinkle with herbs.
