So I propose to cook it, but only a little differently - individually served, in tartlets. You will get the "Lazy Fur Coat" appetizer.
Ingredients: Carrots, Champignons, Shallots, Vegetable oil, Tomato paste, Vinegar - apple, Water, Sugar, Beetroot, Potatoes, Mayonnaise, Herring - fillets, Spices - salt, black pepper, Tartlets

A vegetable "fur coat" can be prepared classic - with beets, or original - with mushrooms and carrots - also a very tasty combination with herring. For a "classic fur coat" boil beets, potatoes and carrots in advance. Prepare the onion marinade with water, apple cider vinegar, and sugar. Chop the shallots and pour over the marinade, leave for 15 minutes.
Grate boiled and cooled vegetables on a coarse grater. Mix with pressed pickled onions. Season vegetables with mayonnaise - the first "fur coat" for the classics is ready. For the second "fur coat" you will need mushrooms, raw carrots and shallots. Chop mushrooms and onions as small as possible. Fry chopped mushrooms and vegetables in hot vegetable oil, season with spices to taste. When ready, remove them from the pan. Do not pour oil out.
In the oil remaining in the pan, with the addition of a small amount of water, put out the carrots grated on a coarse grater. Simmer until the carrots are softened, while the water should completely evaporate. Once the carrots are ready, add the sautéed mushrooms and onions and tomato paste to the carrots. Stir and cool. Both of these fillings can be prepared on the eve of the holiday and stored in the refrigerator, covered from airing.
And when the time comes to set the table, all that remains is to fill the ready-made tartlets with filling and cover with a piece of herring fillet on top. Decorate at your discretion with any greens.
