Very tasty! It can be cooked for dessert, as an appetizer, and instead of bread for soups. Moreover, the dough is the simplest. And for the filling, you just need to grate the pumpkin.

HOW TO COOK:
First the dough. Sift flour into a bowl. I dissolve salt in a glass of warm milk. Instead of milk, you can use plain water or whey. But it’s best with milk.
I pour the milk into the flour and knead the dough. You can use a planetary mixer or knead the dough with your hands. This is how the dough should turn out (it doesn't stick to your hands):
I put the dough in a bag for at least half an hour. And I'm preparing the filling. For the filling, I rub pumpkin on a coarse grater. You do not need to boil or bake the pumpkin beforehand.
The "rested" dough has become even more "obedient". Now it can be easily rolled into a very thin layer. You need to roll it out as thinly as possible (so that you can even see the drawing of the table).
My cake today turned out to be about 1 mx 50 cm. I spread the filling (raw grated pumpkin) and distribute it evenly throughout the cake.
And now a choice. You can add salt and spices, herbs and a little garlic (for the salty version). Or, as I do today, sprinkle the pumpkin with sugar. Sugar to taste. I will indicate in the ingredients the amount that I usually add. It turns out moderately sweet. But if you like sweeter - add more sugar. You can add some more cinnamon for flavor if you like.
Then I spread the pieces of butter. For a salty version, you can use olive or coconut oil. But with creamy, of course, it will be tastier. I roll it all up.
Now I stretch the roll with my hands.
And I put it in an oiled mold. I have a shape of 26 cm.
I press the cake with my hands. And I put it in an oven preheated to 180 degrees for 40-45 minutes. Take a look in your oven. The tortilla should brown well.
When the cake is ready, I grease it with a little more butter on top. And that's it! You can serve.
Aromaaat! And very tasty! I love this hot cake - it tastes better. If it remains, I then heat up the pieces of this "pie" in the microwave. This is how it looks in section:
