# fast Today I cook couscous with pumpkin and cranberries - a quick and simple dish for breakfast, dinner or for a side dish. As the name suggests, the main ingredients in this dish are couscous, pumpkin and dried cranberries. If there are no cranberries, then other berries or dried fruits will do - raisins, or pieces of dried apricots.
Ingredients: fresh or frozen pumpkin, couscous, dried or dried cranberries, water, apple juice, salt, thyme, vegetable oil
Cooking method:
First, I cut the pumpkin into small cubes. Pumpkin can be taken both fresh and frozen in pieces. Pour oil into a saucepan and spread the pumpkin. Salt and add thyme. Again, if there is no thyme, the spices can be added to taste. Cinnamon, nutmeg, or whatever you like will also work.
I heat the pumpkin over low heat under the lid for about 20 minutes. Stir from time to time. The pieces should be soft, but still hold their shape well.
In the meantime, the pumpkin is being prepared, I pour water and homemade apple juice into a separate saucepan. I took one and a half glasses of water and half a glass of juice, but the proportion may be different. For example 50 to 50. The main thing is to make a total of 2 glasses of liquid. Instead of water and juice, there can only be water or vegetable broth. I bring it to a boil. Then I pour it into the finished pumpkin, add the couscous and dried cranberries.
I stir, let the dish boil. It happens quickly. Then I immediately turn off the fire. Since the couscous is steamed, and most often this is what is sold in our stores, it does not require cooking. It is enough to pour boiling water over it and let it brew for 5-10 minutes.
This is exactly what I did. I have infused the dish. If you loosen it with a fork, you will see what a crumbly couscous. Time to put it on the plates.
If desired, add couscous with pumpkin and cranberries with honey. This is a wonderful breakfast or dinner. It can also serve as a side dish.
Pumpkin couscous is suitable for lean or vegan (vegetarian) menus. And also for diet food. Good appetite!
