S'iglino is a Cretan pork dish. The meat is marinated in the fat obtained in the process of cooking pork. This method allows you to preserve the meat for a long period of time. #pea soup # soup # smoked meats
Ingredients: split peas, water, onion, carrots, vegetable oil, potatoes, bacon, siglino (you can use any other smoked meat of your choice), meat bouillon cube (to taste), salt, pepper, parsley (for serving)
Cooking method:
Pour the peas in hot water and leave to soak for 4-6 hours (I left it overnight).
Rinse the peas in cold water, put in a saucepan and add 2 liters of water. Bring to a boil, then reduce heat and cook for 30 to 60 minutes (depending on the type of peas, mine was cooked in 30 minutes).
While the peas are cooking, chop the bacon and smoked meat into small cubes and place in a saucepan with the bouillon cube. If the water starts to boil, add hot water.
Cut the onion into small cubes, grate the carrots and fry until soft in vegetable oil. Season with salt, pepper and put in a saucepan with peas. Mix well.
Peel potatoes, cut into small cubes, add to our soup and cook for another 20 minutes.
Remove soup from heat. And leave to brew for half an hour. Divide the soup into bowls and garnish with parsley. BON APPETIT! 😋
