Ingredients: whole wheat flour (I use ts.z. Uvelka), rye flour, warm water (approx. 38-40 ° C), dry yeast, sugar, salt, vegetable oil
Cooking method:
Activate the yeast: Pour warm water into a wide bowl. Pour 1 tbsp. l sugar and mix with a whisk. Add yeast and mix again. Let stand, covered with a towel, for 10-15 minutes until a "cap" appears.
When the dough is ready, pour 2 tsp. l salt without a slide and 1 tsp. l sugar. Mix.
Gradually sift into a bowl first 200 g of whole wheat flour. Then gradually add 200 g of rye flour (rye flour can not be sifted). First, it is better to knead the dough with a whisk, then with a spoon. Add vegetable oil. Mix again. And add more flour. Add oil and start kneading the dough. I knead the dough with a planetary mixer. The dough turned out great. We cover the bowl and put it in heat for an hour, to rise.
Cover the bowl with a towel and leave in a warm place for 1 hour.
When the dough has risen, you need to knead it a little.
Then form a loaf and place it on a baking sheet lined with a silicone mat (you can use oiled paper, or spread the bread in oiled molds).
If desired, you can sprinkle the dough with a little whole grain flour.
Let the dough stand for another 40 minutes. When it rises, make cuts on it with a knife.
Put the bread in a preheated oven to 190 ° C for 40 minutes if you have 1 large loaf, and for 30-35 minutes if you divide the dough into pieces and bake them in molds.
