Puff pastry with protein cream

Ingredients: puff pastry (ready), egg yolk, milk, cream, egg white, sugar, citric acid, vanillin, powdered sugar

Cooking method:

I have a roll of dough. Therefore, I cut it into two squares. Roll out each piece lightly and cut into strips. I like small cakes. I got 18 stripes, 9 pieces from one square of dough. If you want standard size cakes, then cut each square into 6 strips.

Roll each strip onto a cone. If you don't have a pastry cone, no problem. They are easy to make yourself. First, roll up an envelope of A4 paper, wrap it with foil on top. These cones can be used for a long time.

Lubricate with yolk and bake at 180 ° C until golden brown.

Protein mix with sugar and citric acid. Put in a water bath and beat for 7-10 minutes until a strong foam. As soon as stable peaks form, remove from the water bath and beat for another 1-2 minutes. Add vanilla if desired.

Transfer the cream to a pastry bag and fill the cooled tubules. Sprinkle with powdered sugar if desired. Happy tea!
