Let's prepare the necessary products for soup with celery and chicken. Beijing cabbage can be replaced with white cabbage, but then it will need to be put a little earlier, since it is more rigid. As for spices, I used only ground black pepper.
Pour water into a saucepan and put the chicken pieces to boil. I chose chicken thighs for the soup. Bring to a boil, remove the foam and add the onion and carrots, cut into cubes. Salt to taste.
Cook the broth over medium heat, avoiding a violent boil. After 10 minutes, add diced potatoes and chopped cabbage to the pan. If using Beijing cabbage, then add it later.
While the potatoes and cabbage are boiling, cut the celery stalks into 2-3 mm slices. Add celery to the pot.
With a slight boil, cook the soup for 5-10 minutes. We take out the chicken drumsticks or other parts of the chicken from the soup, remove the meat and cut it into pieces. We return the meat to the soup.
Add finely chopped or grated tomato to the soup. Pepper the soup to taste.
Turn off the heat and leave the soup to brew for 5-10 minutes. Soup with chicken and celery is ready!
